Recipes

Everyone love's a delicious quick and easy recipe, especially when they're camping. This page is dedicated to sharing some of those recipes with other campers and friends of Nautical Point RV Park. Many of these recipes are family recipes and some, our campers have shared with us. 

Easy Campfire Salmon

 

Lay out a large piece of tin foil
Slice a lemon and lay flat on surface of foil
Lay Salmon on top of the lemons
Add butter, salt and pepper then wrap up the sides and fold tightly together, like a pouch.
Place on a baking tray and cook in the oven for 30 minutes at 325 or 350 depending on how hot your oven runs, or place on grill rack 10 to 15 minutes depending on hotness of grill

Jambalaya


2 pieces of 20" in length heavy duty aluminum foil
1/2 pound peeled and deveined raw Shrimp
4 oz boneless, skinless chicken breast, diced
1 Turkey sausage, sliced
1/2 medium Onion, diced
1 medium Green Pepper, diced
1 rib Celery, diced
2 medium Tomatoes, diced
2 cloves Garlic, minced
1 1/2 tbsp Cajun seasoning
1 cup instant rice
1/2 cup Chicken broth
Salt and pepper to taste
Cooking Oil spray

In large bowl, toss together all ingredients except cooking spray, mix well until combined. Fold over edges of aluminum foil by about 1/2 inch so liquid will not run off. Spray foil with cooking oil and divide mixture among the two pieces and place in center of foil. Grasp top and bottom edges (the longer sides) and pull up over the food, pinching together at the top. Begin folding down towards the center to seal. Place pouches on grill close to the fies for 25 minutes or until rice is fully cooked. Carefully open pouch and pour into large serving dish. Serve immediately. Serves 4

Beer Pancakes

 

Ingredients and supplies:
1 can of beer
1 leak-proof container of canola oil
1 leak-proof container of maple syrup
1 ziploc bag of pancake mix - sugar, salt, baking powder and flour
Knife
Backpacking skillet
Backpacking fold-up spatula

Instructions:
First, grease the skillet with a small amount of canola oil. Pour the remainder of the oil in the gallon Ziploc bag that contains the dry pancake mix.

Dutch Oven Peach Cobbler

 

 INGREDIENTS:
2 cans (15 oz.) sliced peaches
1 can of Sprite
1 box of yellow cake mix
1 stick of butter (1/2 cup)

 

DIRECTIONS:
Spray the inside of the Dutch oven with cooking spray or better yet, use a disposable Dutch oven foil liner. Pour the cans of peaches in the Dutch oven and then sprinkle the cake mix over the peaches. Pour the Sprite over the cake mix. Evenly slice the butter over the cake mixture. Do not stir. Cover and bake for about 35 minutes using about 30 hot briquettes. We place about 10 under the oven and about 20 on the top.
